Hot Sauce Challenge

The heat of a pepper or hot sauce is measured in [ame=http://en.wikipedia.org/wiki/Scoville]Scoville scale - Wikipedia, the free encyclopedia[/ame] Units.

It is determined by how many drops of sugar water are required to mask the heat of the pepper. A jalapeno takes between 3K and 8K equal parts of water to pepper to mask the heat so a jalapeno is rated between 3K and 8K. Tabasco Sauce is about 2,500 to 5,000.

Capsaicin is the chemical in peppers that makes them hot. Pure capsaicin is 16 Million Scoville Units and is as spicy as anything can get.

We did a hot sauce challenge once at the kitchen I work at it was to funny watching their faces as they ate each pepper they must have gone through 5 gallons of milk that day

Whoa momma! This stuff is really good! It's smoky and tangy with just the right amount of sugar. It's not very spicy compared to the regular Tabasco, but the flavor is simply amazing. I put it on some pizza last night and my chorizo and eggs sandwich this morning. If you ever find this thing, grab a few bottles.

And it made me think this thread was worth a shot. And I thought it might make an interesting video.

When I was about 8 my buddy's brother said he would give me 95 cents if I ate a whole habanero pepper. I woke up in the middle of the night with ungodly stomach pains, it was all I could do to roll around on the floor driving my fist into my stomach.

Interesting. I never knew the reason peppers are hot is to drive away mammals so birds can spread the seeds

I have some ground dried naga jolokia. Either it is over rated or my batch is a dud. I also have some ground dried habanero and it is just as hot as the naga.

ON TOPIC:

I say this whole heat scale is a subjective thing.
What seems hot to me may seem mild to the next person or vice - versa, so how can we determine the heat of a pepper except through personal experience?

The other issue is that not all peppers grow with the same heat.
I've had peppers coming from the same plant where some seem hotter than others.
So how could I describe the heat of those peppers to someone else?

Also, different countries seem to have different views of what is hot; here in Canada 'Pepper Jack' cheese is mild and the peppers they put in it have no heat at all, in my opinion.
Pepper Jack cheese from the U.S. I've tried had considerable heat by comparison.

I eat habanero and cheese tamales for breakfast. My wife told me about a time she went to Europe and ate a spicy dish in France. All it had was black pepper. I know Indian and Thai food is really spicy, so they're used to the heat.

I love hot spicy foods, I have Hot pepper sauce (made from scotch bonnet peppers) on sandwiches. Ive ate that many hot chillys my taste buds dont register anything milder than a vindaloo curry.

I have had that cool million pepper extract on a ham sandwich - the hotest I ever had, boy did that burn like hell! never again!!
I would use it in a dish maybe but never a sandwich again.

Kong, if I had $50 lying around I'd definitely send you the capciacin crystal. Watching you mix that with a tequila shot would be epic.

As for spicy being subjective, that's true to an extent, however when you start getting into the HOT HOT realm like Kong is describing, their is not much subjectivity. Scoville units is pure science.

I used to have a fetish for Dave's Insanity Sauce. I think I've told this story before, but I single handedly ruined a high school cafeteria lunch break by dumping an entire bottle into the community BBQ sauce. There's more to the story, but you get the idea.

As I've also mentioned before, I'm all about the Sricacha (sp?), nowadays. Perfect amount of heat with great flavor. Mmmmm good!

I've had the stuff that was on the desk behind him. My buddy put about 500 wings worth on 1 wing and for about 20 minutes he was on his knees hanging off the counter in the kitchen and all his pathetic little voice could say was "heeeelp".

The stuff behind him is Dave's Insanity Sauce. See my earlier post, but I was hooked on the stuff back in the day. It's lethal, but compared to this other stuff Kong has been talking about, it's nothing.

Oh yeah, I think the stuff I had was a powered up version because it came in a small bottle but I dont know for sure, I've never seen a big bottle like that. It clocks in at 180,000 scovill units.

I read a lot about hot sauces. It is the closest thing I have to a physical addiction.

I haven't tried Marie Sharp's but I have read several reviews that say it is the best all around when considering heat, flavor and price.

This is their hottest one

It is still cooler than Dave's but it is close to habanero level. They have some lower level varieties too.

Btw you guys are nuts to pursue this kind of stuff. I can barely stand the spice/heat of V8 Spicy Hot, if I had some of that crystalized stuff I'd probably need medical attention.
