Regarding Super Punch Out. I'm not familiar with the game at all but MARP is using the coin op version in it's latest tournament with the setting cranked up to hard.
Regarding Racing. Most racing games have an ending. I wouldn't count out Out Run out just because of that. It is super popular so maybe something people have played less. Here are a couple of suggestions. I play a lot of driving games so I can give more if needed.
