The Subway ones were using free codes that were posted online(subway released them as the contest went on so you didn't have to keep buying food)
The contests were all different. For GT5 and High Velocity bowling, you entered 3 codes a day and clicked icons on a board. If you uncovered 2 that matched you won.
Uncharted 3 was the same with the 3 codes a day, but you picked an area on a map and then 1 of 3 icons in that area.
I'm pretty sure the Subway contests, it didn't matter what you picked. All prizes were given away at a certain time. Whoever entered the code first after that time would win.
I may have slightly bent the rules and used multiple email accounts to increase my chances, but once I won what I wanted I stopped playing(unlike the people who would win multiple prizes and keep playing)
The Coke one I found 1 free code online, entered it and won(I assume it was time based as well). I think it was like a slot machine kind of thing.
