Smash bros is fighting regardless of the minor details. You can turn off items and other options. Soul caliber has options to make it ring out only or knock out only, similar to smash bros. More options is always better.
It's a simple fighting game with plenty of variety but at it's core it's a fighting game like the rest.

I never played GG so I can't really comment on it.
